Now that we know what a sopapilla is, what do you say we stuff some? These will get the family running to the dinner table. Gather together…

  • 6-8 sopapillas
  • 1-2 cups cooked pinto beans
  • 1½-2 cup red or green chili sauce
  • 1 cup lettuce chopped fine
  • 1 cup grated cheese – your choice
  • 1 cup chopped tomatoes

Cut you sopapillas on three sides so that they can be opened like a book. Cover the bottom with beans. Layer the lettuce, tomatoes and cheese over the beans. Spoon chili over top of that and repeat ending with the chili to melt the cheese. (I like to make mine really full.)

Carefully place “flap” of sopapilla over top. Serve and enjoy. You can eat with a fork and knife or as a sandwich.
