This southwestern Green Chili and Corn casserole makes a tasty meal on its own or as a side dish with chicken, pork chops or even a roast. The part I like is how quick it is to throw together. This is a good one to do with the kids.

  • 1 pkg prepared stuffing mix (I call it cheaters stuffing)
  • 1 small can of whole kernel corn
  • 1 large can of chopped green chili or fresh if you have it.
  • 1 jar of Hot cheese dip mixed with ½ cup of milk
  • 1 cup of grated cheese (pepper jack will give it some kick)
  • 1 tablespoon of dried parsley
  • 1 lb ground meat (cooked and drained) or an equal amount of leftover chicken-beef or pork.
  • Salt and pepper to taste.

Preheat your oven to 350°

Prepare the stuffing per label directions. Place half of it in an 11 X 7 baking dish that has been sprayed with non-stick spray.

Layer the corn, green chili, meat and about ½ of the cheese dip over the dressing. Spread the rest of the dressing on top. Spread the rest of the cheese dip evenly and top with grated cheese. Bake for 30 minutes. Enjoy!
