Here’s a quick and easy southwestern favorite. I especially enjoy this on a cold evening. The wood stove warming me on the outside and a bowl of Frito Pie to warm the insides.
- To start with, make one recipe of Red Chili that you’ll find here.
- 1 bag Fritos® or Corn Chips of your choice
- 1 cup chopped lettuce
- 1 cup chopped tomatoes
- 1 cup grated cheese ( I use cheddar)
- chopped onion (optional)
Prepare the red chili according to this recipe. Place enough Fritos or corn chips to half fill a large soup bowl.
Now fill that bowl with red chili. Top with the other ingredients and enjoy! Try this with sopapillas or fry bread. Delicious
